Manyshot is sought after because of the combination with adrenaline from fury of the wild ED. This combination is referred to as "furyshot", and allows volleys of 4 arrows at a time all at x5 damage and 2-20 threat range (so really x15 damage). In epic moment you get about 7 such volleys, + you can use adrenaline charges to add more. It's considered to be the top "burst DPS" combination in the game currently, and so it's a very nice addition (if you can fit it) to any DPS build and usually more than compensates for what you lose. But... it's far from required, you can certainly focus more on melee DPS and ignore ranged, but the likely result is your overall DPS (particularly in boss fights and big fights) will drop a bit.
6 Monk for shadow veil is also FOTM because it adds survivability via shadow veil. But again, this is not required. You could build a 12ftr/6pal/2monk ignoring manyshot and shadow veil and instead get better healing (unyielding sovereignty and better LoH), save a twist (no need to twist to get turns for divine might), and maybe slightly better melee and have a very solid build. The other things monk provide, even from just 2 levels are: ability to get into stances (earth in grandmaster gives +1 multi on 19-20), ability to twist dance of flowers for +1.5[W], evasion, 2 (or more) feats not including the forms, monk finishers, some special attacks, etc.... so it's a highly valuable splash. Don't feel constrained to follow these builds exactly, just use them for ideas on what you can squeeze into a character for abilities. The way the game has evolved having great saves, some decent delf healing, and excellent damage is a good place to be, how you get there is up to you.
