Two Questions About the New Classes

Question 1: Let us say I make a pure Cleric, level her to 30, then perform an epic reset. During the reset, leveling her back to 20, could I switch her to a Dark Apostate? If yes, upon reaching level 20, could I then perform a heroic reset back to level 1 and gain the Dark Apostate Past Life Feat?

Question 2: Can I make a Sacred Fist Paladin that uses daggers or a quarterstaff but remains centered, working as described from 1 to 20?

I already have a lot of new class projects going (Barbarian, Druid, Warlock) but am trying to remain open to new things. It occurred to me that an evasion Paladin with a quarterstaff might be very tough and easy for me to play, since I already have a staff rogue and a staff monk 18/rogue 2 and enjoy both of them.

Yes, to both!
You don't need to use a +1 heart in order to switch from a base class to an archetype, so doing an Epic Reincarnation should allow you to do the same. (Someone else might confirm if this actually works, but to my understanding I don't see why it wouldn't)
You'll need the enhancement from VKF to be centered with daggers, of course, and to get the qstaff deity you'll need to splash in a divine class with SF, but you'd probably do so anyways since they don't get divine might like a normal paladin

Well that's great. If I can flip sub class at will, this new system really just means going from class x 3 to class x 6. I can deal with that.

Maybe an evasion staff Paladin / Rogue can crack the reaper but for me.
