That's a great question...

I think they do extreme sports because when I log in they're frequently t-pose-falling under the guild ship, or, if they're in Wynnwood Hall, they're in the grassy valley under the stairs.

I assume they visit friends and family, run domestic errands, have hobbies, they only spend time with me for the serious work of adventuring.

Well I usually leave them in a tavern or on the guild ship that has a tavern, so yeah, they do exactly what you'd expect them to do when left alone indefinitely in a tavern. They drink. A lot. When I next attempt to log in they behave like they have been drinking and take too long to login, get stuck in load screens, lag, and other drunken behavior.
