What do you mean they don't? I pick up coins from all kinds of chests and barrels and they automatically get sorted into platinum, gold, silver and copper. I never touch them between picking them up and spending them. I assumed that this was part of the backpack technology that the coin lords manage (clearly they manage backpack technology since they have the tech to expand it). I think it is because of idea, that they are uncontrollable without it, but it can be because they don't like to do progress like old medieval society.

They don't have coin sorting technology because they don't need it. They just dump everything onto the plane of night. Oh, wait ...
