New Golem?
How about a composite golem? One comprised of things from it's surroundings (breakables that have not yet been broken) that if not destroyed utterly just gets bigger, stronger and meaner? once it's life points are beaten down to a certain percentage set a timer to "Finish Him!" if not done...well....hope you have A LOT of heals.

Duck Tape Golum
It will 'acquire' your weapon if you swing at it. Magic Missiles just get stuck on it..

Wooden Golem?
Disguised to look like a tree?Just a random, forgettable NPC doing things an NPC does
Things that NPCs do include, but are not limited to:
Having a gold goblet over my head to indicate availability of a quest
Having a catchphrase that never really catches on
Having various rewards that are generally not worth the trouble
Wandering around randomly
Giving out obvious information if it wasn't obvious enough
Repeating the same lines over and over again
Repeating the same lines over and over again
