Every class can solo most EE quests if right geared and played. Class or splash is only a part the power of a build at epics, the rest of the power comes from epic destinies, twists and feats, and items/weapons, buffs you wear. For last and most important is the playstyle, skills and knowdledge you have to overcome the challenge from the quests.
If a class or build is better for you at ee quests, it would depend mostly on your playstyle and taste, so the only way to know the best build for you is playing diferent kind of builds and playstyles (ranged dps, burst damage, dps spellcasting, control spellcast/ moderate dmg, meele burst dmg, meele tankish moderate dps, etc).
It seems you like tankish builds with good survival and sustained dps but at the same time you found the Vanguard paladin boring and not really good, which make me curious because that's one of the main advantages of that type of build. (For me a 12fvs/6 fighter/2 pal is very similar to a vanguard paladin, with better self heal but not really better damage and not much diference in playstyle)
Is hard to tell why you were lacking damage and survival on the vanguard paladin because you don't mention what destinies you were playing, what gear you had and what stats you got (hp, prr, ac, heal amp, positive spellpower, str, doublestrike, damage bonus, spellpoints, saves, action boosts, energy resists, displacement spell or clickies, etc). If you don't have a good epic destiny maxed and some twists unlocked will be harder to solo ee, same as gear. (for example legendary dreadnought or divine crusader are generally good dps destinies for meeles while fury of the wild is good for some ranged characters or draconic or shiradi is for some casters, etc)
Another class you may consider is warlock, I don't know much of them because haven't played one, but many people claim that is one of the easiest classes for playing and soloing, if not the best, being very good at survival and damage. So could check in the forums for that. Also ranged dps builds are good to solo since can avoid most of the damage by being at distance, for example a mechanic rogue bladeforged 18 rogue/2 paladin should get you self heal from reconstruct sla + paladin saves with ranged damage with repeaters or great crossbow. Or a Paladin 14/rogue 6 for example using mechanic tree for repeaters. Shurikens or bow builds as well.
If you don't know much of epic quests and want to explore, having high saves could be good to avoid some damage and crowd control effects from enemies. A well geared and built meele with just 6 fighter and kensei core for dps should be enough dps to solo most of the quests on ee, you just take a bit longer (like a few more mins or less depending the quest ) to complete the quest than a pure dps class.
