What are the ranges for spells in this game? For example, I have a level 16 Sorcerer. My fireball spell should have a range of 1,040 feet, with no metamagic feats applied, but I'm pretty sure it does not have that range.

Honestly, the easiest way to tell is to see how far away you can target a mob with and get a feel for it. Most spells have a pretty solid range, while touch spells you have to be up close and personal. Enlarge Spells will let you cast from twice as far away, and Ray type spells effectively get Enlarge Spell applied for free without needing to take it
