Hi Geoff, I partially agree with you. I have focused on stealth builds for mixed solo play (due to a wife and baby in my life) and occasional group play. Also, there are many mobs in the game that can't be stealthed or assassinated as everyone knows.
(Note that in epics, one can choose quests that are appealing to the build and playstyle--there are reasons why the high DPS builds like to boast speed runs of LoD or Temple of Vol since those quests appeal to power zerging.)
So you might find it appealing that when I design a stealth build, it must have the strengths and defenses to withstand all levels of DDO play except EE raids (the ranged ones can survive there).
For me, a stealth build needs
1) shadow veil. It is too good to pass up. So 6 monk levels which give skellie beaters for free
2) trap skills and noisemaker use
3) improved evasion
4) burst DPS for bosses and targets that need to be annihilated
5) faster sneaking
6) epic twists like Fade into Weave
Note that I do not consider assasinate part of stealth play, despite everyone's heavy association with the two. Yes, assassins can kill and remain stealthed, but there are too many aspects of the game where this does not work.

The Twilight Blade in my sig does this fairly well although I am still testing the burst DPS--its bow version will be better there. And yeah, spiders etc are unstealthable (I just solo zerged yesterday elite Spawn of Whisperdoom at level, so at least I can kill them).
