I would bring Cellimas from the Grotto so she could let me use the "protection from death" spell in other quests

    That reply is an auto-win!

I'd bring Elminster, and not let him teleport out the second he can to leave the party on their own. I'd make him use that uber one-shot spell on everything we encounter... And I'd stick a towel in his mouth so he couldn't prattle on.

Default Which NPC would you like to bring along with you on a quest?

    Bensen Virandson from Detour.

    Why?

Because he is one of the few Harpers I know of that isin't a piker. Bensen is not afraid to mix it up with the baddies. The rest of the pikers, excuse me Harpers, can learn a trick or two from the old man.

The Life-Shaper. Must have incredible power. Every time I die, she/it can make me into any new class, race, etc. Imagine the diversity of a quest!

I'd bring Elminster, and have him walk ahead of me, down the narrow & suspicious corridor. I'd poke him with a stick if necessary.
I used to be with it, but then they changed what it was, now what's it is weird and scary to me.

Elminster. He's pretty chatty, and at the very least things are unlikely to be boring with him around...

Hmm, a tough choice, but I'd have to say...

Kylea d'Cannith, with "Mad" Anne Rackham as a close second.

I mean, sure, a fellow seafarer (I'm a pirate in-game) would be nice, but then it feels like our characters would overlap.

Plus, it never hurts to have an Artificer who's good at tinkering with various magical machinery around.
Just a random, forgettable NPC doing things an NPC does
Things that NPCs do include, but are not limited to:

Having a gold goblet over my head to indicate availability of a quest
Having a catchphrase that never really catches on
Having various rewards that are generally not worth the trouble
    Wandering around randomly
Giving out obvious information if it wasn't obvious enough
Repeating the same lines over and over again
