My build is very buff heavy so whenever I run into mobs with dispel or anti magic field I am put at a huge disadvantage. What are some ways to stop dispell so I don't get severely crippled during those types of encounters.

The Pale Lavender Ioun stone will allow a limited resistance to Dispell and antimagic - up to the point all its charges are used up (1 per spell level absorbed).
The only other option is be able to hit and kill from a long distance away.
Next look at what buffs you are dependent upon and look to see if there is gear that can provide this type of buff or even a lesser version.
While not every buff exists in a permanent form on gear, there are some that do. With the Prison Pack there is now even armor with a permanent Heroism/Greater Heroism attribute that cannot be dispelled.
Pale Lavendar is amazing for dealing with Anti-Magic from Beholders. Uses 1 charge per absorption and protects you from losing buffs - though it still doesn't let you cast irrc.
Although, other spells really hurt the total charge of the stone.
Best way to avoid the anti magic field is to stay out of range, but to still be able to harm the mob (with Enlarged spells, Throwing Weapons or Bows/Xbows). In most cases where you encounter eg. Beholders, which do not have much hitpoints and move slowly, there is enough space to stand away far enough and still hitting them without suffering from anti magic field. Scorrows are a bit different - but in most cases you also do not need to buff the whole repertoire you actually could buff. Save the SP for boss fights. If your character is able to heal or repair, take a melee Hireling (Barbarian/Fighter/Paladin, fleshy or Warforged) and command her/him to attack the beholder or scorrow first. Usually they will beat it down quite fast, as melee players will do too.
There's also the cloak from the Threnal chain last quest end reward list that absorbs spells.
