If it wasn't for the forum I wouldn't even have heard of user channels.
I almost always join pugs, simply because I prefer questing in groups and I'm a member of a reasonably large guild, but nowhere in-game have I seen user channels mentioned.
Do they perhaps operate along the same lines as Fight Club? (The first rule...)

Basically anyone can create a channel, several of the big guilds host channels and there is one for TRs. Once the channel is created anyone can be invited, they just need to know the password. People are very picky on who they ask because once you invite someone, you can not kick them out... which is annoying. So, if the person turns out to be a jerk, then they are there for life or until you reform the channel.
The chat comes up in your chat window the same as guild or party chat. You can have 4 channels at a time on each toon.
So, not fight club, we do talk about them
