If I have a +3% doublestrike chance, when I hit the mob and that hit procs doublestrike, do I get 2 ki instead of one? (assuming not in sun stance)

That is a good question. I've never really considered it before and do not know the answer. I can say that any extra ki generated would be negligible if it is produced by doublestrikes. The proc rate would have to be well above 25% to make much of a difference even in sun stance.
Good question, though.
The newest computer can merely compound, at speed, the oldest problem in the relations between human beings, and in the end the communicator will be confronted with the old problem, of what to say and how to say it. - Edward R. Murrow (1964)
I agree, great question and I'd like to know as well
It would be rather easy to test though, but I don't have an unarmed toon high enough level to wear doublestrike items.

If your break dr to do more than 1 base damage you gain ki.
To be exact you do not gain 2 ki rather 1 ki for main and 1 ki for double strike.
It is pretty easy to test for walk up to the training dummy , look at ki total, hit attack button once notice if double strike , examine ki total. Subtract old ki total from new key total.
