HP, healing amp, self-healing. Use scrolls and sf pots to keep yourself topped of, don't wait for external healing. If you are below 700 HP with no PRR, 2 hits from anything could kill you.

Double 60 stats might have been overkill, but i think a very dedicated toon would be posible to get it. especially since you can drop whatever heroic feats you thought was helpfull and focus only on ki moves and ED clikies.
In my other threat ive been stating that, heroic way of monk melee has been dying ever since grandmaster of flower came out. I took 60 dex and wisdom because i did not wanted to get into this whole "mainable" debate of yugo pots etc.
Give me a couple hours, ill write a monk out for ya.

ive gotten it up to a 58wisdom, 34dex(could get it up to a 60/40 but wanted more hp).
this with 888hp with 5 feats left open. 144 ac.
according to jbleargh an 80 prr is posible lowering all incomming hits by 35.91%.
so you only get 64.09%dmg

displacement clikie: 50 hits go through.
then 25% dodge:37% go though
then its attack vs armor class to hit you(144 should help abit)
then for however much you get hit you get only hit for 64% of normal.
Now the question is, is 400+% healing amp with healing curse enough to get over this on ee?
doubt it, but we can dream.

How much crowd control is being done that you're getting beaten up?
You should be tackling one monster at a time (if you can help it), and that one monster should be stunned/tripped/blinded/held/etc.
This is considerably more difficult in the new content.
I went in expecting difficulty on EE similar to Eveningstar. I was promptly robbed of both that assumption and my dignity by being pasted along the walls and floors of the dungeon. Repeatedly. In retrospect, there is a lot I can do to improve my defense to make it more manageable. For instance, being level 25 would help. I was 22 at the time, so a chunk of HP was missing along with some gear upgrades.
Besides that though, the toughest mobs in there are the Undead Giants. They have a massive melee range and the knockback keeps everyone split up to the point that Mass Heals are no longer reliable. The strategy we ended up using to deal with them was to get one person to kite all the mobs bar one, while the rest of the group focused on one. The helpful thing about them being Undead however is that they should not have a Constitution score, which makes their fort save relatively low. When I go back in, I'll be packing my Frozen Tunic to CC them. An already weak fort save combined with a couple of Imp Sunders should reduce it well within the range to land a quick freeze proc. And with their HP the way it is, you're more likely than not to have it land before they die. If multiple melee are using Freezing Ice, the difficulty reduces tremendously.
Displacement clickies are also fantastic for them. I solo "tanked" the UD Giant in PoP on EE in the lever room for a good minute relying almost entirely on it, Incorporiality, a moderate amount of Dodge and Silver Flame pots. My HP and PRR were the limiting factors though, 2 hits in a row would kill me, and eventually did. But I have no doubt that as they increase, so will the number of hits I can take.
Perhaps some of the Light Monk abilities to entomb them would work, I'm not sure. It'd be worth trying though, since although it's a Will save, an undead creature has to make 2 saves to avoid it.
