Ring sets choice - when and where?

My little monk is finishing of her collection of ring sets but now it appears that she is hoarding more nice stuff than she can wear at a given time so I would like a piece of advice on what to wear when. She got two pairs of ring/necklace and two of ring/belt:

Kyosho's Ring (going holy burst) & Shintao Cord
Oremi's Ring (holy burst) & Oremi's Necklace
Encrusted Ring & Knost's Belt
Epic Ring of the Stalker (going GFL) & Epic Spare Hand (going +6cha, +2 good luck)

I think at cap she will mostly be using her Shintao and Cannith challenge sets, right? Is there any situations when she should bring out some of the other stuff or should it just sit in the bank waiting for better times? And what should she wear on lvl 18 next live?

Also I would love a sound advice on what to slot in the Encrusted Ring if I got both the Thaarak wraps and (eventually) alchemical air/air wraps, as in when will I bring it out and what kind of burst will be best against the enemies together with the wraps of preference for that situation?

Alchemical Air doesn't stack with shocking burst ToD ring so that knocks out the second choice; stalker ring is the only choice left for devil content.

For non-devil content I made an acid burst ring for Abbot/DQ but that doesn't stack with Tharaak Wraps.

Here is what I have:
Devils: Stalker+Holy Burst
Abbot: Holy Burst+Acid Burst
eLoB: Holy Burst++2 exc con (or stalker depending)

Spare Hand won't add any direct DPS if you're using air/air alchemical wraps, I chose air/water for this reason though there are problems with that currently (not sure if crushing wave/NBC overwriting was fixed in U13.2).

I'm currently running with the Kensai set.

Orimi's and Shintao's necklace but didn't have any useful rings (except the Verik's on my 20th).

I was running with orimi's necklace and the warchanter's ring just to have something with holy burst until my 20th.

Still working on getting the monk rings. I'm thinking that I'll at least get some benefit from my to hit and +3 crit confirmations. At the moment I'm unsure if it's work the ki drop since I run in mountain stance most of the time.

My monk runs with: (most time)
Kyoshos w/ Holy Burst and Shintao Cord
Epic Ring of the Stalker w/ +6 dex

Swaps:

Shintao Set -----> Oremis Set WHEN Frozen Tunic----->Icy Raiments

The +4 dodge is nice to have, but Can get along without it most quests (unless soloin) plus the freezing ice is cool

I was lucky to get my three sets in just 13 runs so now I need to go looking for the trophies to slot them

I take it that the Shintao set with holy burst is a winner as expected, swapping it for the Henshin Mystic when swapping out of the Frozen Tunic and still needing the Ki On Hit +1.

Ring of the Stalker/Spare Hand is also largely a winner except against mobs that can't be stunned or sneak attacked (like some undead and bosses), when the Frenzied Berserker will be a better choice.

Overall acid burst seems like the best choice for the Encrusted Ring against bosses while shocking burst would be better against trash as I am more likely to wear the Frenzied Berserker set with the Thaarak wraps than with alchemical stunners (as stunners goes well with Spare Hand/Ring of the Stalker).
