I like these three classes. I've already played ddo until lvl 12 or 13. I would like now to start a new character. Does anyone know which these classes has the highest single target dps? "Wizard, Ranger or Sorcerer"

Sorcerers, as they are implimented in this game, are best for nuking. So yes, make a sorcerer and take one of the elemental savant PrEs.
Single target DPS is broken down to Trash DPS vs Boss DPS.
Wizards are easier to build for insta-killing Trash but Boss DPS right now it is Sorcerer hands down.
I've capped my sorc to 20. She is no savant as it was my choice to have a few spells all equally strong. Specially ice and fire. The other 2 savant types don't appeal to me much, so I stayed a non-savant. Its not that bad as I've heard (I frankly hate when people try to impose a savant as a mandatory condition for a sorc, without knowing my build purpose and personal choices).

Sorc, with a Savant Pre. Aside from flavor or roleplaying reasons, there is not a really good reason not to take one.
You can change that Savant based on the level range you are in and the prevalent content there.
Alot go fire until the Vale, then switch to Water or Air.
Earth is also good 1-20.
If you want as Sorc that does not care about maxing their damage....then play a Wiz.
Ranged dps is the sorcerer, hands down. You can't get much more damage-y than 3-4k crits with polar ray (water savant), constant rain of fireballs and meteor swarms (fire savant), high AoE damage through chain lightning and lightning bolt (air savant), and constant persistent AoE's and maximized self defense (earth savant). Sorcerers are practically made for dishing out massive damage.
Wizards lack the damage of sorcerers, but make up for it with high spell DC's and spell penetration, making for excellent crowd controllers and the best at using instant kill spells like finger of death, phantasmal killer, or wail of the banshee. For trash mobs, buffing, and utility, wizards are the best.
Rangers are another thing entirely. Arcane Archers can deal out some pretty nice damage, and aren't hampered by elemental resistances like sorcerers and wizards, and all of their attacks are more than double the range of casters, but you'll never see insane critical hits with a longbow. Don't sell them short, though; an Arcane Archer with one of those new elemental longbows, haste, and manyshot with all of their buffs going is a nasty sonofab*tch. Add on a paralyzer and they can be excellent crowd control.
