When people do monk splashes what armour/weapons do they then use, does being uncentered remove the benefits of the monk splash?
Do you end up having to use handwraps/outfits for your gear?

Depends on the build and player.

You keep the wisdom to AC as long as you don't wear armor or use a shield, and you keep evasion as long as you're in light armor or no armor, but you lose the ability to retain or spend ki, so all of your monk special abilities are useless.

Do you end up having to use handwraps/outfits for your gear?
Depends on the build and player. Some splash monk for the two feats and evasion. Some splash it for the use of wraps. There's no correct answer to this question.

I'll give you an example.
My arty has a monk splash. Carrying a runearm 99.9% of the time means she's uncentered 99.9% of the time. She still has evasion and a useless wisdom to AC bonus. She also has two feats. When she needs to pass through a trap to disarm it she equips a pair of handwraps of greater parrying and drops into water stance, raising her reflex save by 4 more points for the trip through.
