So if my Cleric took this feat would he be forbidden from using shields? It says unencumbered and unarmored, but nothing about shields. I know monks cannot use them...

Not 100% sure, but I believe equipping a shield would make you armoured. Also, since shields uncentre true monks, I would assume they also impede their dilletante benefits.

You lose the benefits of being centered, which in this case is just the ability to add your Wisdom bonus to your AC. Your healing amp, proficiencies should remain the same.
A monk who uses a shield loses their centered bonuses, but still retain most of their abilities otherwise.

Conclusion: only take monk dilettante for the healing amp. Monk wisdom doesn't stack with Cleric wisdom and +5 AC is too expensive and usually worthless.
Splashing monk on a cleric is still a decent idea for evasion, +2 wisdom (in water stance) and unarmed combat but that's another kettle of fish.
Or splash some monk levels for evasion & ocean stance to get +2 wisdom, then take paladin dilly for some extra boost to your saves!
