Nice, good old "strings" command I presume?
Where are the mutations for the various schools from? I assume they aren't complete, since Strength and Wisdom seem to be the only stats available, and Jump and Intimidate the only skills.
The school info is actually from the tooltip on the crafting skill page,
which you can find on your character sheet.
And no, it's far from complete but we can guess a bit where some of the other things will fit.

I'd imagine that the answer is 'no,' but can named items be harvested for parts? I know they don't have prefixes or suffixes, but would someone be able to melt down their ESoS to add +10 to something else?

Also, where do we acquire the items to remove properties from? Are they purchasable? Do they only drop as treasure? Do we have to buy them with TP?

Half of these are quests that I run-once-and-done for favor, and never see again. I'd like to assume that unless people are looking for specific named items out of them, most people are the same.
Not to mention... end reward lists? Sorrowdusk and Threnal, if I remember correctly, make you do like 3-4 quests at a time for a single end reward. Even if this is a 100% guaranteed in-the-list drop... why not make it content that we actually want to do? Give me something useful from, for example, Amrath quests. Normally the best thing I see in those lists is a Major Mana Pot.
Since everything you remove gets turned into magical essences of that school and sub-type melting down ESoS would be a waste, since you could have just as well melted down 2 random items with both half that enhancement.
You will later have to reform that magical essence into a shard of that enhancement.

Does this even come on randomly generated loot? I'd actually be ok with melting my Head of Good Fortune or my ghetto ring of the buccaneer (pre-patch, so double dex bonus, gooo), but I was under the impression that we wouldn't be able to render down named items.
Metalline most likely, silver probably not. Only silver (threaded) wraps I know are a named end-reward item, and I while I hope otherwise, I don't think we're going to be able to melt named items.
I assume you're referring to the items that drop out of Devil Assault - I believe those are effectively named items. Even though they appear like random lootgen drops, there's only a few possibilities of how those items turn out, similar to sup potency (never see anything except +3 sup pot VI).

I'm hoping they have more then just 'suffix' and 'prefix' as options for this system.
That regimented system is part of what led to the stagnant trash loot we have today.
I would like to see a more free flowing system that depended upon the item properties adding up in a formula to determine ML as the real limiting factor.

I would think thet that was the purpose behind the special, end-reward, components are for. They would allow you to add a unique property other than Enhancement/Suffix/Prefix. But at this point this is just my guess.
I read somewhere that they other collectables will eventually become part of the crafting system, I just can't remember where I saw it.
