A friend of mine believes that I can have one summoned skelly form the PM Enhancement, AND one summoned pet from the "summon monster" spell - is this correct? It makes a huge difference to how I'll design this toon.

Your Friend is correct.
You can summon whatever you have available as per your enhancement (skel/skel knight etc) and also cast summon monster 'n' (via memorized spell or scroll)'Live Long, Play Longer'
