First you figure out what you want to do. Then you decide how mixing two classes would go about doing that. Next you analyze whether or not you will be good enough at doing any of those things well enough to contribute at all stages of the game. Finally, you decide if you want to try that build or scrap it completely.
Try to envision your character at level 5, 10, 15 and 20 and see what it is you want to be able to do at each of those levels. Most multi-class builds try to do too many things and end up unable to do much of anything at later levels of the game.
There are several rules of thumb that will help:
1) If you are going to mulitclass rogue, take it at first level.
2) Do not mix spell-casting classes. Splashing a caster class into a melee or a melee into a caster is something that you should not be attempting unless you know what you're doing.
3) Look for synergies between abilities and skills used for classes.
4) When in doubt, do not multi-class.

It's a hugely useful program that you can use to plan out every element of character building (other than equipment) from level 1 to 20.
More generally, you can do research on the forums to look at what other people play/advocate, or just play around on your own to get a feel for things. It doesn't take much time to get the first 5-6 levels, and you can always reroll.
What you may also hear is advice saying play one character to level 20 before trying to plan your own build. That will give you a lot of familiarity with game mechanics, which will help in any building efforts.
