Paladins and Evasion, acquired taking 2 rogue or monk levels, work very well; paladins usually have very good saves (Divine Grace, Aura of Good).
Is it worth giving up the capstone? It entirely depends on you.

In addition, you can splash in 2 Monk levels instead of the 2 Rogue levels
Rogue: full ranks in UMD, melee speed boost and Sneak Attack. No, you will not be able to disarm traps with a Paladin 18/Rogue 2.
Monk: 2 feats and a couple of extra points toward your saving throws.
Saves on my pure 20 paladin with a 16 dex is high 30's low 40's with no feats dedicated to increasing saves.

Can you get your Reflex save high enough to make Evasion useful at endgame? Yes.
Is it worth sacrificing DPS to get it? That's up to you.I like the extra survivability of Evasion, but then I don't like playing pure DPS builds.
