but is there a better way than right clicking on a character to target them for healing? Every time I do a monster will inevitably become my target then I just heal myself...

Either click on the players name on the party list or use the F keys to select a party member.

If you want to click to select players, click on colored player bar to select them (usually on the left side of your screen). It allows you to quickly and easily move between players without the problems you identified when you try to click on the image of the player itself.

using these you can select the person uninterupted, or if throwing mass heals in say, the shroud, target one person and say to stay near them, or just click on their name in the party bar

One way is to click on their name/blue/red bar in your party list. Yes, I left out the yellow ki bar because monks are icky.
