if you are just starting out and not spoiled from months of running around in Wind 4, then I would suggest using Earth1 stance for the 1st few levels. The DR makes a difference. By the time you can get Wind2 you should probably switch over.
That being said, I couldn't do it. When I TR'ed I tried using Earth1 for a bit, like I did when I first started my monk, and it felt intolerably slow. But I have been spoiled by months of Wind 4 already.
Just my opinion. Do whatever you want.

It totally depends on your build, gear, and the situation at hand.
Well starting out you get the first version of all 4 now for free.
I suggest keeping all 4 around for a bit and practicing using different ones for different fights, though eventually you will likely be in Windstance all the time. some monks prefer Firestance. Most Monks take some of them to the highest level for the Ki Strikes they come with. Ussually 2 or 3, rarely 4.
Earth is usefull early on for Damage resistance, unless you have been lucky enough to pick up a low level outfit or robe of Invulnerability.
Water Stance is usefull for running through traps you know are there.
Firestance is usefull when you are burning through Ki. Some monks use this as thier main stance.
Windstance is usefull all the time for pure attack speed, and tends to be the main stance of most Monks.
