In my opnion, Tumble of course.

First, If you are familar with the dungeon, you will know all the spots of hidden doors.

Second, If you got the sand's goggles or Tarne's goggles, true seeing helps you to see all hiden doors and hidden monsters. (I didn't put any skill in spot , can still can see most of the invisible mobs, maybe because of the true seeing of the monk's high wis mod).

Third, tumble for backflip(31 or higher) and forwardflip(36 or higher) is cool.

I actually took both. But as one skill. It's called "stumble". My monk is very clumsy

Yeah, spot can be simulated through pre-knowledge and items (even mob positions that are mostly static can allow you to run to right where the nasty caster is going to appear and hit him immediately). Tumble is not as easily raised to levels where you look cool doing it so in choosing between those two (assuming you already have UMD) I'd give my vote to Tumble. My 10int human monk has maxed tumble simply for the looking good function of it.
