Default What does being centered give me?

I was thinking of trying ombi's "westside" build, (a 12 rogue / 6 ranger /2 monk) Tempest acrobat 2 build with insane AC and attack speed, and was confused about what set up is for when.

So what happens when you're not centered?

As far as I can tell you can't use windstance and lose 1 ac, so apparently when dps'ing he uses a radience rapier and a light pick for when he makes them helpless via crippling strike?

Then when would he use dual kama's?

And what setup would be used when fighting a raid boss? Is it better to be centered or not?

Any help would be greatly appreciated.

Thank you, that was extremely helpful. Probably should have gone there instead of the compendium :P

Yeah for a build with two levels of monk, being Centered isn't always priority.
