is there any way to take both paths with the monk?

i was thinking of doing it by either by grabbing the second path later in a feat slot or using fred

nope, both path feats can only be taken as a "bonus" feat on your 3rd monk level. fred's coding is smart enough that if you try to swap one path feat he will only let you swap to the other path feat.

hang on a sec, if someone takes one of the pre-made paths, they get a bonus feat for that path?

No. No path grants extra bonus feats over other methods of level progression. What Redicular means is that the only time that the philosophy feats ("Path of Harmonious Balance" or "Path of Inevitable Dominion," hence the confusion) can be taken is at level 3 monk (which grants a bonus feat limited only to those two choices).
