I know you can only take 1 PrE per class but can you take a 1 PrE from 2 diffent classes? Can I have a Kensai/F.Berserker, an Assassin/KotC, or some other multiclass PrE combo?

Yes. However, if a pre is associated with a race as well as a class, you cannot take the pre as a racial and then also take a different pre for that class (ie, an elf ranger cannot take arcane archer via the elf access and also take tempest; but an elf fighter could take kensai and also take arcane archer via the elf access to it, if he qualified).

That only matters for arcane archer now and stalwart defender once it's modified to be accessible to all dwarves (also worth noting: Eladrin has stated that the benefits of stalwart defender and defender of siberys do not stack, so multiclass paladin/fighters have no reason to take both, and dwarven paladins will not benefit from taking both lines).

the only note I have to add is that the 3rd racial PrE that has been "confirmed" is Warforged Juggernaut, which will count as a barbarian PrE.

Also, human, halfling, elf, and dwarf will all get access to "dragonmarked Heir" PrE, but it has not been announced what, if any, slot that will fill.

Some PrE cannnot be taken together due to prerequisites. Assassin and Deepwood both require ranger/rogue hide, taking one removes the option of the other, making it impossible to qualify for both via enhancements.
