The Character Planner lets a Kensai put APs in more than one Signature Weapon. Is that correct?
If so, I'm wondering if it's worthwhile for a THF Kensai to put APs into a one-handed weapon when S&B fighting/tanking. Thoughts?

Just one, but you can still be really really good with others as long as they are the same type you specced for, slasher, pierce etc. The kensai str boost, combat feat DC's you can use with anything, and the 10% alacrity capstone applies to all weapons and fighting styles.
