If you read the Eberron Novels currently available you will see that the Elementals are forced into service (Trapped by Dragonshards) and fight back against those whose control is weak or non-existent or do not have the proper Dragonmark.

I would make the argument that a sentient creature that knew freedom, then enslaved would more than likely seek freedom again.

A basic elemental, however, may enjoy that which they have been trapped to in, and continue the work without question. For instance, a fire elemental.. if it was told to burn stuff, and it loved to burn, and you gave it stuff to burn... would it really wish to leave?

But the quori go beyond a basic elemental, and I would think have a desire to be free to do what it wishes to do.
But a return question for you.. The quori do not "die" persay but are reborn. How do they find new experiences then? Example, plants. They feed from sunlight and neutriants. If a plant could talk, they would not be able to understand "hunger" as we know it. So how could they experience it? Is it possible that this plane of existence offered feelings and sensations new to the quori and they became addicted to it so much they desired to stay?

In every description from novels to source books the elementals are described as being very angry at being captured. In Whispers of the Vampires Blade there is a spot where two airships collide. It is written in there that when the elementals break free they attack anything, PC or NPC, that gets in their way in their attempt to get free of the ship.

I have always ruled this way as well. If the elemental breaks free or is released from its bindings then choas has a tendency to run abound for a while until the elemental is defeated, rebound, or escapes.

Regardless of how well they like to burn things, taking away someones freewill overides any feelings of joy or fun. The fact that someone forces you to do it takes "all the fun out". Lastly there is the fact that you are taken from your home plane which im sure most elementals do not enjoy either. Im pretty sure they find our plane of existence as unfriendly as we would find thiers.

Well, there are a couple of ways to answer this, as there are to every question you've asked so far.

Anthropomorphizing the elementals, they would be furious beyond reason - seething with hatred for the people who imprisoned them, and, by extension, everything that looked remotely like those people (depending on how smart they are).

On the other hand, if we throw away the concept of typical human behaviors in the elementals, maybe it's like a vacation. Maybe it's like being asleep. Heck, for all we know, the opportunity to use one's primal essence for a specific purpose is an elemental's idea of heaven, and they are incredibly grateful for the chance for their lives to have meaning.

And this same thing applies to most of your other questions about the Dal Quor - depending on how much we anthropomorphize them, the answer can vary from rage to joy.

Now, the obvious rejoinder to this is: "if we don't anthropomorphize, we can't reach any conclusions". But half the fun in creation of interesting characters (and races/species/etc) is to come up with unusual motivations and perspectives, which turn out to be perfectly rational once you understand their internal personalities.

So for all we know, the Quori love being contained in docents, and they were excited about the prospect of experiencing "real life". They became aggressively eager to seek hosts, which sparked the rest of the events on Xen'drik.
