    i'm not a catholic, not even a christian. however, st patricks day is a day close to my heart. when i was in my teens, more than a decade ago, i attended st patricks school. it is a mission school that was founded by the christian brothers. over time, due to legislation, it became a government aided school but the catholic presence is still there

    with colonial styled buildings, the school's heritage is certainly rich. while not a catholic, me and my friends would often attend mass, even look for the brothers for confessions. never once were we rejected. each time we met the brothers, sometimes as a group, we always felt a sense of relief but more importantly the steely determination yet warmth exluded by the brothers which impacted us

    my 4 years in the school was a wonderful. studies aside, the best moments for me were the mass for various occasions but none were as huge as st patricks. me and my friends now would wear something green. not just for commemorating the day but as a reminder to our heritage. of course now, a stout is added to that list of "rituals"

    [What an individual is celebrating is completely up to them. In the US, St. Patricks day has become a day to do one of the following (among other things):

    1) Celebrate Irish heritage
    2) Celebrate alcohol
    3) Force the family to eat corned beef and cabbage for dinner

    The actual roots of the holiday have little bearing on what people today are celebrating

    Keep that book learnin' away from me, I'm going to go celebrate my Irish heritage with some green beer.

    At least I think I've got some Irish heritage. As long as my family has been in the states, I can probably claim just about all nationalities, if they would have me.

    Slainte! An bhfuil tú ar meisce fós?

    4 pounds corned beef brisket
    5 black peppercorns
    1/2 teaspoon garlic powder
    1 onion, peeled and left whole
    2 bay leaves
    1 pinch salt
    1 small head cabbage, core and cut it into wedges
    6 large potatoes, quartered or eighth
    4 large carrots, peeled and sliced
    1/4 cup chopped fresh parsley
    2 tablespoons butter
    1 pint stout.

    In a dutch oven, Place the brisket, peppercorns, garlic powder, onion, bay leaves and salt. Fill pan with water to cover everything and then a little. Bring to a boil and cook for 20 minutes. Skim off residue that floats to the top. Reduce heat to a simmer and cook for 2 maybe 2 1/2 hours? until the meat can be pulled apart with a fork.

    Once the meat is done, add cabbage, potatoes and carrots, push them down in the liquid then simmer for an additional until the potatoes are tender, oh bout 15 minutes or so. Skim off any oil that comes to the top. Stir in the butter and parsley. Remove from the heat. Remove meat from the pot and place onto a serving dish and let rest for a few minutes. Also remove vegetables to a bowl and keep warm. Serve on a platter and spoon juices on top. drink the stout.

    My wife is normally a vegetarian of convenience. For lent she decided to go vegan. You can't imagine how good that recipe sounds to me.

    My wife's birthday is today and she's never had corned beef, amazing huh? She thought it has something to do with corn... turns out, it comes from brining to preserve the meat and apparently the salt crystals were the size of corn, hence the term "corned". Anyways... I decided to "Corn" my own brisket for her this year. Never done it before but so far it looks to be fantastic, made my own pickling spice mix too.
