I can name a certain wizard whose name was nothing short of a "demi goddess"(HINT) in PM if you like, that is a good example of why clerics, wizards, and sorcerers are better designed for ranged combat than direct hands-on melee.

Rogues make great sneak-attack assassins. They do not make very good aggro handlers. Rogues(pure, no multiclass) are not tanks.
Clerics are given more HP so they don't die as fast and leave the party stranded without major healing support. I would like all caster types to be given a little HP boost like this, but it's just one of those things you accept.
Bards make good secondary DPS only because of their buffs. Bards(pure, no multiclass) are great as second string melee, but don't typically last well at all as the primary. They are not 'tanks'.
As for a +7 to your stats, it's doable.
20 base +2 1750 tome, +2 racial, +3 class, +3 levels, +6 item = 36 DEX on my rangers. When lvl 16 hits I'll be hunting a +3 tome I think(+1 racial at 16, +1 class at lvl 15... 38 dex, then 39 with a +7 item, 40 with a +3 tome).
