Pally 18 / rog 2 is a pretty solid combo for a first-timer, although I wouldn't try tanking with it. However, I was thinking of a classic S&B pally tank:

The idea is to have a highly survivable aggro magnet to keep the mobs' attention off your husband's rogue while he's busy backstabbing them that still puts out a fair bit of DPS on her own. The main drawback to duoing a pair of melees is that you miss out on the CC and burst DPS options that a caster can bring, esp. at higher levels.
Caveat: most DDO vets will tell you a dedicated tank isn't "necessary" outside of a few raid bosses. And that's true...once you're a DDO vet who knows how to solo blind-folded.
But personally I think they underestimate the usefulness of a newbie-friendly tank build to someone who's still learning.
