Open up your character sheet and look in the upper right near the "Bio" tab. You'll see a "Pet" button that opens your pet's character sheet. In that sheet, change tabs to "Pet Enhancements". In the various enhancements, you can click the "+" signs to expand active ones, which show a square version of that icon that you can drag to your pet's action bar.

AFAIK, the pets don't always listen to those commands, and they'll do it on their own anyway. I usually don't bother with it because if I'm relying on my pet to save my keister, I'm in a heap of trouble anyway and should probably be worrying about something else

Also, in options, near the bottom of the keymap tab, are hireling keymaps. You can set first, 2nd, 3rd, etc or all hirelings.

Read above for instructions about dragging squares to bars.

Usually the only key mapping required for iron dogs/wolves is remapping the "select your pet" to a convenient key location via the normal remapping key options.
This allows easy healing of your pet.
Pets tend to choose their own extra abilities on their own, and you need only worry about parking them/asking them to follow along with aggressive/defensive/inactive choices.

They do like heavy fort on one of their equipment slots (found on their character sheet).
