Drusen d'Jorasco the Champion!
Howabout NPCs who are silly as Champions? I now regret not taking a screenshot - when the Update 24 first patched, I did Necromancer's Doom and the kidnapped girl, Drusen d'Jorasco was a Champion! I thought to myself - should have found a way to pick the lock early in the quest and have her fight with us...
Not sure if the hotfix took away NPCs like Drusen from getting Champion but it was a funny sight.

I saw some Champion kobold slaves in STK... trying to figure why they are still slaves if they are Champions? Just fight your way out!
