I'm definitely a fan of multifacted melee toons - basically any toon that can melee well at endgame and do other stuff too.
Things like heavily melee-oriented clerics (Max Str, Dwarf, Power Attack builds that have only modest Wisdom) - here you can melee, buff and heal and usually do all three in the course of one quest. Battlebards are similar, and UMD melees with trap skills (like Disector, my tempest rogue) are also a blast to play.
I don't have a zerging problem.

Only ONE player has built a character they have had fun with? That's sad.
I have a ton of fun on my lvl 16 Wizzie....has 98% of all the spells, loves to miss the instant kill on FoD....get aggro....miss again....backpeddle....and then land once he only has 3 hps left...lol....the glass tank is the future!! ok he's going to hide in a corner somewhere now....
And I have a Rogue 1/ Ranger 5 that I'm bring up, OMG......my first ranger and he is freaking awesome. I've been a caster and tank builder for over 2 years and never really gave much thought to rolling a ranger until I met a guildie who had several rangers. He's a ranged specilist, he does more damage than my tank with a single bow shot. He has found and disarmed all the traps he has come across so far including all the traps in TR @ 4th lvl. It was only normal, but a non-trap monkey that is able to find and disarm traps on a 7th level quest when he is only 4th level is a great feeling! He can self heal, and at higher levels with UMD will be able to cast other spells to hopefully include heal and res. Just need to find a way to get his AC up higher without a need for a shield. But fortunately, most stuff dies long before it can get to me. He has been great in parties and has performed beyond my expectations as a soloable toon.
Barbarian anyone....who doesn't love to run into a hord of monsters and with 2 or 3 swings have everything twitching from their untimely deaths....no AC and the cleric hates me.....but it's just too much fun . But being a cleric myself at times, I try my hardest to let the non squishy fighter get aggro first...at least until I hit them.
I have 9 different toons.....2 wizzies, a ranger/rogue, two intimitanks one being wf, a barbarian and a cleric...the others are going to be rerolled or are bank toons....but I have a blast with each and every build. Its a game and exploring the different configurations of toonage is half the fun. But my Wizzie is still by far my favorite to play.

In PnP I was always a Melee type....so my first toon was a Fighter who has developed into a 12 ftr/2 Pally/2 Barb and I have had and still have great fun when I play him but I have also developed an appreciation for Casters (have a Wizzie and a Cleric, both WF)
and have a great time playing those guys too. I have a Drow Rogue and a Dwarven Bard as well and they are just ok to play. But just being abe to play the game is fun for me...I love DDO!
My 16 bard is my favorite. With songs and buffs, your desired. You can play back up healer or fill in for a cleric on some occasions. And with the right build and gear you get right up front and chop things into little pieces if you desire. I recommend trying one if you haven't yet
I'm greatly enjoying a str-based rogue that Sigtrent came up with (I requested it, but still ). Bladebeard is a s&b rogue with some tactics bent, and I have to say that cleaving with sneak attack dice is a very satisfying experience.
Stealth casters are fun - my only capped toon is a halfling pure wizard with stealth skills maxed out (9.5! Whoo!), and while it's not the fastest way to run, it is very enjoyable to sneak into a quest and pull out some ninja charm action. See also Ghoste's WF stealth wizzy goodness.

the cleric metagame. trying to keep people alive while spamming heal spells/scrolls requires some sp discipline
My main is a Rgr7/Rog4/Wiz5. He's been a lot of fun over the years.
I might have done things a bit differently if I had known what was to come.....
But on the first day of a new mod, I feel like I have the most powerful char in the game. because it seems I am better prepared for the unknown than anyone else seems to be.
My High dex, finesse, Drow Wiz is fun also. A very simple build really. Pure Wiz, but good stealth skills, ref save, some AC, capable of light tanking and switching out spells as needed. People think you need high HP to survive, but with the exception of traps and being in the middle of a mob, that is not true. (and my Wiz can render that mob incapable of harming me in many cases)
My Enchantment CC Sorc was fun too. She can spam spells so fast as to neuter an army in most cases. She's not as versitile as the Wiz, but she seems very powerful in most dungeons.
Assassin Rog12. Great SA damage....more than I imagined. Plus UMD. I fix people more than many clerics do it seems.
I've had fun with so many builds, it would almost be easier to write about which builds were not fun to play.
(which would be Ftr/Brb types for me......self healing only through pots and very dependant on buffs/healing from others)

Being able to take care of yourself is a big help towards an enjoyable character - UMD or a splash of something with curative spells available on wands can keep you flexible enough to enjoy whatever gets thrown at you. Some of the mutts that are supposedly "gimped" end up last ones standing because they don't need a strap on buffer/healer/etc.

That's exactly why he's so much fun.
I can't do what a 600 HP Barb can do.
But I don't ever need a buffer or healer, and I can hurt the Pit Fiend, and the Pit Fiend cannot hurt me!
I won't pretent to be a heavy tank or a powerful sorc.....but I can do so much more, and take care of myself so well, that I am never a burden on a group.....never a mana drain...etc. And usually the last one standing on so many occasions.
Many people think Jack-of-all-trades means master of none, but that's not exactly true. I'm a near master Ranged Rogue, And do well in melee against trash mobs, or if I can control agro from the big guys....something I'm pretty good at with al my chars.
However, most of my chars since have been more pure builds and less of a mutt than my main. A few have been specialty builds, but I now see that DDO's enhancement system really favors pure classes.
But multi-classed builds are not gimped like people think.
And player and equipment mean so much more than build in this game. I'll never understand why people discriminate on class or build.

My main is a Drow 7 Rogue / 7 Wiz / 2 Ranger; complete utility support build. Like you I would have made him a little different if I knew what modifications were coming to the game. Probably 10 Rogue / 5 Wiz / 1 Monk.
He has been the most fun to play because of his independence. I also like all the synergies I connected with this build. I like that he brings alot to the table than just trapsmithing skills. He was built to duo and trio with friends so he has all the essentials for ripping through quests. I couldn't remake another character like this though; it was soooo difficult getting him to lvl cap. Build discrimination is inevitable and I'm not in the mood to debate my case to the ignorant.
I did have plenty of fun playing a Drow CC Bard Spellsinger. Although I'm slowly rolling out a Warchanter that I'll enjoy too.
My most recent character is a 15/1 Paladin / Fighter, currently 7/1. I'm really enjoying this build: max intimidate, dwarven durability, rockin improved trip, etc. He'll be my first non-support character.

Like Talon and others, being self-sufficient makes me happy... I try to do all quests for the first time with a small group of friends (there's 4 of us total in my guild), so although my characters are not "uber" specialized, they are very good at surviving and handling the unknown...
I have a lot of fun with all my characters

13/3 Bard/Rogue
15/1 Cleric/Paladin
16 Wizard
11/5 Ranger/Wizard
I will have to say my favorite is the hobbit Ranger/Wizard.... He is ridiculously good... And it's funny, because most people see his build and think "gimp"... Having all the good Ranger feats and spells, plus halfling dragonmarks, plus Ranger Devotion enhancements, plus Wizard Maximize (works on Dragonmarks), plus Wizard Extend, plus self-cast barkskin, Ram's might, Resists and Protects, Shield, blur, haste, displacement, plus favored enemies (and in the current end-game, pretty much everything I fight is favored enemy)
All those add up to a TWF, high DPS, high AC, self-hasted, self-displaced, self-healing (I got five 210 point heals, seven 120 point CSW, nine 30 point CLW) juggernaut of a hobbit....
(Recently I got a pair of w/p daggers - he was good before, now he's just insane)
Now is he the best at DPS or AC or healing? Nope... but he's pretty good at all three (and in most quests I have enough SP to hit my buddies with displacement too.. so I guess I'm a buffer as well!)
Multi-classing is fun....
