Looking at the character sheet, there is no generic "spell power".. it's either acid, light, etc.. So when something, like consume/stricken for example, say the damage scales with 125% spell power... what exactly does it mean? I'm assuming it's the base potency or spell power stat, but the character sheet doesn't display that, so I'm wondering if it uses something else, or... maybe I'm over thinking this.

If I remember correctly, Consume from the Warlock enhancement causes Anarchic damage (Chaotic), which is alignment based damage. So that falls under Light Spell Power I believe that you can see on your character sheet.

The type of spell power that you need is light spellpower since it affects alignment damage as well. As for the 125%, this means that instead of the base damage being increased by whatever your spellpower is, it's being increased by your spellpower * 1.25.

to add to this, scaling with 125% spell power mean a .125 modifier on what light spellpower would actually give.

in a vaccum, lets say the spell should do 100 base damage
with 100 light spellpower any light spell would do 200 damage
but thanks to that ability scaling, you actually would do 225 damage

so you get about 25% more damage via spellpower than you normally should
