Bonuses to Assassinate are believed to be applying to all Bird of Prey attacks that have a saving throw. If you are experiencing otherwise I would love a bug report detailing what you are experiencing.

None of the melee falcon strikes are getting assassinate bonuses applied to them, the only ones I've tried are: the bonus 3 from the tree enhancement, the legendary feat, the tier 1 shadowdancer twist, and the 4 piece sentient. None of them work at all.

I just wanted to start by saying I am really enjoying playing the Falconry tree, nice work there :)
I have a Monk 20 that uses tier 5 Falconry (41 APs), tier 4 Vistani (26 Aps) with 13 APs in Ninja. Dual daggers, WIS to hit, dmg and tactics DCs in GMoF EDestiny. Great fun!

I, however, noticed that the DC tooltip for 'Death from Above strike' and 'Coordinated strike' is not fully updating [they both display 70 DC], whereas 'Diving attack strike' and 'Strike for the eye' are [displays 94 DC]. They all use the same formula, hence me noticing a difference (I have screenshots, but do not know how to upload them here). Perhaps it is just their tooltip not fully updating? It could potentially be showing the real DC, and therefore, not fully calculating it as it should per formula?

I hope you are able to have a look at this when you have a chance, and thanks for all the great changes you have been implementing in the game: I have been playing since 2006, and I must say I have never had this much fun playing so many classes and characters (17 active alts in total) in years.

N.B. 'Deadly instinct' does not affect any of these Falconry DCs, as well as none of the GMoF attacks [only affects Dire charge and Quivering palm]. Also wondering if this is WAI?

Perhaps this is what the OP is referring to? I have checked my character today again, just to be sure, and the same discrepancy in the DCs showing is there (so this has not changed since the latest updates, which came after my forum post).
My question is still the same: is there just a tooltip DC display bug or is there an issue with the real DCs? All these attacks should have the same DCs, as the formula is the same.

I hope you are have a chance to look at this at some point, as it would be great to have a response from a Dev :)

After trying out master falconer (40 points spent - active falcon attacks have a chance to reset the cooldown on death from above) for about a month, the reset was so infrequent (less than 5 times for me in that month), I wonder if something is broken with it...anyone else notice this?
