Particularly Necromantic ones. If I cast Finger of Death or Destruction, do Nullification and Void Lore items have any effect?

Yes ... but make sure to check dmg in description, , some of them do bane dmg ... like with destruction but slay living does negative.

So Nullification/Void Lore only have effect if the target made its save?

They only affect secondary damage, they do not increase the DC for the instant-kill effect.

Correct, the only time Spell Power comes into play is when it applies to the damage taken due to the save.
Just like all Instant Death Spells are not in the Necromancy School, not all of them apply Negative Energy damage and some don't apply damage on a save
Examples
Finger of Death - Applies Negative Energy Damage
Wail of the Banshee - Applies Negative Levels (not damage)
Phantasmal Killer - Applies Bane Damage
It is important to understand what type of damage as creatures could be resistant/immune to the damage part and if the damage is "Alignment" it uses the Radiant spell power and if Untyped it uses the force spell power
