Does a tome of greater learning for heroics stay on character if you use a tome of lesser epic learning too?

Yes, the icon will switch to the epic one once you hit level 20, but you will have the heroic xp one back when you TR back to heroic levels..

Does a tome of greater learning for heroics stay on character if you use a tome of lesser epic learning too?

Yes the heroic will stay with the character when the toon is below level 20. Lesser epic tome is lvl 20 and above.
