I started to collect some screenshots of raid bosses which HP can be unlocked through the MM (maybe I'm bored).
Anyway here they are for the curious.
If you have any bosses I did not unlock yet, feel free to post them here. :)

Since they don't have MM entries, no.
you should also compile a list of their forts and drs if youre that bored :) i think the wiki is a bit out of date.
DRs on the wiki are still correct as far as I can tell.
There are some bosses with PRR/MRR which might be confusing sometimes, since it shows up in the same color as non-broken DR.
By the way does anyone know when Peaks/Deathwyrm bosses got nerfed?
Thraxata and Nevlarich used to be CR85.
Aurgloroasa used to be CR88.
I find it a bit weird that the TO is the dragon with the most HP now.
...and abbot used to be CR83. What the heck?

Shows that I haven't run it in ages.
Why nerf those 3 raids though? Seems like they didn't touch any other raids except Wyrm/Peaks/MoD.
We got more and more power since they came out and now they tune them down? Makes no sense to me.

i was looking on the wiki for the fort of some bosses and didnt see it. eudoxia for example has no stat info listed at all.
honestly i never noticed that they were nerfed, not that i knew the cr of any boss in the first place. i dont think the bosses in those raids having less hp really matters though, it just takes slightly less time to make their hp 0. assuming their damage stayed the same, i say meh whatever. the challenge of completing them when they were hard(er) back when they came out has been achieved, everyone has their loot already...ee runs are just for favor...

i agree in principle about the infernos and resource management, but the way i see it, either you can complete it in the first place, or you cant and the slightly lower hp wont matter.
it doesnt take a good party to laugh off inferno, it only takes an average party. and if there is a party that is bad but just good enough where the abbot having 300k less hp means they avoid an inferno which would otherwise wipe them or make the raid unrecoverable, i expect they are having problems elsewhere and cant complete a raid like mod where there is pressure in various ways simultaneously. especially on ee compared to en, when the incoming damage is higher. im not saying i approve of nerfing raids, but its not like the challenge is really there anymore, except on lamma...by the time raids hit live many people already have at least a rough idea of how to run them. and it seems like turbine has given up all hope of making an real difficulty in all existing content, and is putting all their eggs into the reaper basket, which i think is pretty obviously a massive mistake given their track record, but i just dont care about anything in this game enough anymore to fret over it. except the fighter pass. i am going to be on that like white on rice.
also it occurs to me, did you forget horoth? youre standing next to him in the sully tod pic but no mention of horoths hp. or does he not count as a raid boss in your opinion?

Pit fiends aren't in the MM either. ;)
Otherwise Arraetrikos would be on the list aswell.

It happened after Varg mentioned auto-scaling was altered. I believe it was by accident. There wasn't enough community feedback for them to notice (?). Am not sure.
