Is there a command to know whether you're still ransack on a certain chest, without having to actually open the chest and reset the timer like an idiot?

The timer starts from the time you first open the chest and goes for one week from there. Opening it again while on ransack will not reset the timer. It will still reset exactly one week from the time of first opening.
There is no command to determine the ransack level of a chest. If you suspect you are getting close to ransack after opening the chest, you can click it again, and if you are now ransacked, the ransack message will appear. That can save you another trip into the dungeon if you remember to do it. To say it another way, if you click on a chest again after opening it, and the ransack message does not appear, then you are not yet ransacked and you can try again.

Well, good to know it doesn't reset the ransack timer. A command to know when it resets would have been awesome though.

That would be a lengthy list consisting of each quest entered in the last 7 days, if the quest isn't on the list it's added at entering the quest (not at opening the first chest) and if that date is more then 604800 seconds old it's removed from the list.
