i tried relevelling a character i had to pick single class..but the freebie they gave ya only allows you to pick new skills and feats ive discovered. Does the +1 version in the store say...allow me to take my fighter/mage and make him just a fighter?

depends how many levels you have of each class. you'd need a heart with a +# for each level you want to change.

a +1 heart will allow you to change a 1wiz/19 fighter into a 20 fighter, by switching out the 1 level of wizard. a +2 will allow you to switch out 2 levels into another class, etc.

hmm so lets say i use a +1...then i could say be a rogue/arti from 4/4 to 5/3...if i use another +1 can i do it again or is it like tomes...i need a progressively higher one to do it?

using a +2 would probably be cheaper then 2 +1's, Also there is a timer between uses (3 days I believe)

But yes, you can use 2 +1 hearts to make a 4/4 into a 6/2, or you can use 1 +2 heart to do the same thing. You dont need an higher one, Its just the +# tells you how many levels you can switch.

The hearts come in +1, +3 & +5 flavours, there are also +20s but those were given out to characters with the enhancement pass, it's unlikely (though we live in hope!) that they'll be in the store.

If its the 1st level you want to change, you have to choose it at the "character creation" screen when determining starting stats - its how a number of people have bladeforged/shadar-kai/pdk/morninglords without the initial level of their specific class.

Oh, and if you have 3 classes, it's trickier.. you can never have more than 3 classes at once, even if they're in the ether-space of levels you haven't yet taken.. tricky to explain but lets try an example:

Lets say you had a 6th level character who'd levelled as 1fighter-2wizard-3wizard-4wizard-5cleric-6fighter & wanted to ditch those fighter levels in favour of rogue.
At 1st level, you couldn't simply take rogue as then you'd end up with 1rogue-2wizard-3wizard-4wizard-5cleric-6fighter... 4 classes in your character's line-up.
Instead you'd have to take either wizard or cleric at 1st level, then the rest as usual, *then* you could substitute rogue for fighter at level 6, since then at no point would you have more than 3 classes. You could then use another heart later to swap out level 1 for rogue.
