So with the new enhancements.. I've been playing a fun dex based acrobat/henshin monk staf build..but with all my sneak attacks I've been wondering... What now can I make sneak attack work on? What exactly does deep wood snipers exposing strike make vulnerable to sneak attack? Everything or is it just a fancy bluff skill and works only on things still vulnerable to sneak attack?(ie undead and the like still immune).
What about assassins trick? So regular dumb skeletons won't work but arcane skeletons or other "intelligent" undead such as wright spell casters will be sneak attacked?

Exposing Strike is just a 'bluff' skill, same as actually using Bluff, or Deception items. If a mob has 100% Fort, or innate Immunity to Sneak Attack, then it wont break that. If you have something that reduces Fort (ie Precision stance), then you'll have a chance to land a Sneak, if they're Bluffed. I think Assassin's Trick is the only way to reduce Immunity to Sneak Attack, though - and like you said, will only work on intelligent opponents.
If you want a Sneak-focused build, you'll want a couple different ways to Bluff opponents, and whatever -% Fort you can find. I'm not sure whether Undead and Constructs and Elementals and Oozes (I think those are the major un-sneakable monster groups) are Immune to Sneak, or merely 100% Fort.

I know at one time it was actually possible to sneak attack all three groups if you could break through enough of their Fortification; a user posted some pictures of him doing so back in U12 or U13. Who knows if the programmers fixed it and just made them immune like PnP or they have kept their Fortification values.
