I'll admit that I probably don't "get it", but lets say you plan out your character down to every little detail, plan ever gear you want to make it as uber as possible. And lets say you finish it, you make the character you wanted with everything.
What happens next? You don't need to do any raids anymore since you already have the items you want, and you don't need any more exp since you're capped out. I don't understand, what happens when you "finish" your character? I can't imagine the answer is anything but "forget about the character, make a new one".
Help me understand, what's the point of finishing a character? I can certainly understand that the journey to the finished character would be fun but it's gonna end.

Turbine make new adventures fairly often, you can do the quests to enjoy the story, visuals and the new challenges that they might bring. Plus they might bring in even better items to upgrade their stuff with.
Other than that people might just enjoy running quests with other people and continue to run with that toon for fun and maybe help out other people get the equipment and exp that they need.
Some people just go roll up another toon and start building that one up to be exactly what they want.
And I guess if none of that interests them, some people go play another game I guess :3 Maybe coming back now and then to see if the level cap has been raised or whatnot.

Help others get their gear.
Run raids/quests with mates.
Find crazy challenges - like soloing hard quests or raids.
Get materials/gear for your other toons.

at the rate the game is going and has been going, there will be new quests to run every few months. with new "endgame" content comes new shinies. eventually the gear you have will be not as good as what you could get from new quests and raids. ive seen some of the new loot in the expansion and i can see my endgame gear for my main probably will be changed up when im done with her tr train.
also, you can take your "finished" character into other quests to pull any bta endgame gear for your other toons. i do that sometimes if my younger toons are not quite up to par with some of the harder quests, ill take my main.
some people park or make their finished characters bank toons and start fresh. theres a zillion ways to build characters and you could try out different classes and builds. after a couple years, the game will have changed a lot and maybe you could dust the cobwebs off your finished toon and it would be basically starting all over again.

Unless you like to PvP I don't see how this is different from any other MMO.

Depends on the Player.
I mean personally, I ask myself the question of why am I going through the effort to make this "Build" if I have no idea what to do with it.
But I guess, it's all about the person really, I mean Some players take joy in the journey with the destination being nothing more then an excuse to go on the journey with no real need to get there. While Others it's all about the destination.
To each their own, there is no wrong way in that regard to play and have fun. You kinda make the game for yourself.

In some other online games a whole new world opens up once you get to max level,max level character only quests and quest lines,instances and gear.
Items that only max level players can wear.
Running a lower level quest on Elite or Epic isn't the same since you have ran it so,so many times.The mobs just get more hitpoints and higher stats,everything else is the same sadly.
DDO is basically max one character and start all over again,then again,then again which is fine if you are into repitition like that.
Too bad Dungeons weren't dynamic and required people to actually do like we used to do in the PnP days and enjoy the crawl rather than a 16 year old's first sexual experience of a quickie. A lot of people seem to have to be able to know the quest like the back of thier hand to do them,no sence of adventure and surprise anymore. =(

You cannot finish your character, ever, since the devs will always nerf your build into the ground just before you get there.
Seriously, since there's new abilities, new loot, levels, new kinds of opponents etc. coming out regularly, you will have to adjust your character quite often or it won't stay "perfect". And you can do what other people have suggested here, i.e. farm, help others, challenge yourself, and so on.
But some people do reach their goal of a flawless character, grow bored and leave. Especially people that play few characters a lot. There's nothing wrong with that though, no one (well, except maybe Turbine then) says you have to play DDO forever.

So that when changes inevitably occur in the game, you can complain loudly here on the forums about how Turbine ruined everything, of course. :)

What's the alternative?
Not play your favorite toon that often to begin with?
Make a ton of alts?
Go outside?

You become free of that toon.
As there is no need, no urge, no drive for you to accomplish anything with it, you are free to do whatever you want with it. Or abandon it. It is the same thing with building a house or garden.
Freedom is scary, because it comes with responsibility and other irritating things. Most people seem to not be able to live with it. They create artificial needs to get away from the freedom. This is why many self built houses are never finished. The builder creates new projects because he needs new goals to distract him.
Looking from outside the game, there is no point to finish a character. But there is no point to start playing either. I play because it provides relaxing distraction from real life. It is a form of addiction. Some people are addicted to character power gain, some want to collect or play with cosmetic pets, some want to pretend to be their toon, some want to collect meta things like favor and TP awards, and some want to collect rare items. Some just want to be social, and that is easiest if there is a common topic, for example DDO, school or choir singing.

Some people focus on the destination. I dont get it, but to each their own.
I cant play like that. To me its about the journey.
I have been told that if I dont grind grind grind then I wont be able to do endgame content.
I have never found that to be true. They dont make this game so hard that it is unbeatable without the best of the best gear.

I prefer to enjoy the journey and not the destination, that will always be their.
