If I'm attacking a creature and have their aggro, then I stun them, will I get sneak attack damage while they are stunned? Or do I not get the sneak attack damage because I have their aggro?

Yes, you get sneak attack damage while an enemy is helpless.
i.e. stunned.

A stunned mob is a helpless mob, helpless qualify for sneak attacks.

A Rogue may do additional damage when attacking an opponent if one of the following conditions is met:
The target is unaware of the Rogue's presence.
The target is attacking another player (possibly under the influence of Intimidate from that player or Diplomacy from the Rogue).
The target is under the effects of a successful Bluff.
The target is helpless.
The target is blind.
The target is under the effects of a Deception item.

edit, Also:
"Auto-Crits" no longer exist. Helpless monsters now take an extra 50% damage from all sources - including sneak attack damage, spells, etc.

I also do not seem to land the sneak attack damage to a paralysed and/or blind mob.
The funny thing is...I can turn side to side on a mob (just rotating) and sometimes can create sneak attacks...
But the mob is blind or helpless...and I am not landing them. Even if I go attack something else then come back to paralysed mob from behind...

Ranger/Rogue types with sneak attack could really benefit from this being fixed or understood better if WAI -- hard to use a main ability if it is not able to be understood correctly or if it is broken.

You do, but it displays incorrectly.
Say you do 10 weapon damage and 10 sneak damage, on a stunned mob is should say 15 15, but it displays as 20 10, (adding the sneak damage to the weapon damage instead).

Your extra sneak ( 50% ) is added on the weapon damage portion not the sneak portion but you do get that extra 50% sneak damage.

Can't help you with the blind issue - but paralyzed is NOT helpless (strange, I know) so you don't get auto-sneak attack damage. If you can paralyze them while they were attacking someone else, they can't change hate to you while they are paralyzed. And bluff and deception items still work while they are paralyzed.

What mobs are you fighting? Is mob fortification playing a role?
When and how to get sneak attack damage is pretty well documented and understood.
Helpless, blind, or not having agro are pretty easy to come by.
Are you solo? or Attacking a Paralyzed mob that no one else is attacking? you are going to get threat in that case and will not get sneak attacks. It is also possible you are grouping with poor DPS characters that can't hold the threat off you.
