Does anybody know if the level bonuses for a given class from Epic Destinies would also boost the level considerations from a Dillettante?

Nope,
Epic Destinies and Classes etc. are totally unrelated unless the destiny specifically says so.
Levels 21 - 25 are Generic and have no related class.

This is actually a really good question in regards to the CLR/FVS/WIZ/SOR dil. I am unable to check as I just TRed my Helf to a human for the next leg of my completionist journey.

Thanks for asking, because I was curious about this also and about to ask the same question on the forums. I currently don't have any Half-elves, so I don't have an answer. But I'd also like to know if the Epic Destinies do boost the Improved Dillettante caster levels.

Interesting question.
Just to make sure I understand correctly, are you saying for example on a Half-Elf Paladin 20 with Sorcerer Dilletante that takes the Draconic Incarnation Epic Destiny (after working to it, of course), that the Improved Dilletante should count as Caster Levels for abilities that specifically mention Caster Levels and not Character levels?
Example Destiny Ability:
Go out with a bang (required 4 - Prereq: Energy Sheath 1) (3 ranks - 1 AP):
(Active Cooldown: 4mins)
Can only be used when HP <= 50%. Nearby enemies take [1d8+8/1d10+10/1d12+12] [fire/cold/acid/electric] damage per caster level (reflex save DC: 20 + 1/2 character level + INT/CHA modifier for half damage). Then trigger a diplomacy effect and become invisible for 20 seconds. Invisibility doesn't break if attacking or casting spells
And also, that said Caster Level increases affect the Improved Dilletante Caster Level?

Yup, that was what I was asking about. Do the dilletante caster levels apply for abilities in the ED trees. And do the tree actives/passives that say they increase Arcane caster level by 1 for Fatesinger as an example or the Exalted Angels line that increases Cleric/Paladin/FvS levels by 1 for each EA level. Will the levels of EA increase my Paladin/Cleric/FvS dilletante by 1 level each time I level it up? Or would the first default active ability from Fatesinger at the bottom increase Bard/Sorcerer/Wizard/Artificer? dilletante levels by 1?

Until I can test it, or someone else does, I'd say nope.
Description on Helf's Cleric Dilly: Able to use wands and scrolls as if you were a level one cleric.
And enhancements up that to lvl 10... for use of wands and scrolls.
Since you're not an actual cleric (don't have cleric levels).
From the description of Celestial Destiny: Each additional level of Exalted Angel grants 50 sp and +1 to Cleric, Paladin and Favored Soul caster levels.
So you'd get a 0+1 cleric level (you're now a level 1 cleric) for each EA level. But can still use wands and scrolls as if you were a level 10 cleric (from the dilly III enhancement).
Edit: With Unyielding Sentinel's Vigor of battle stance which states "You gain Cleric, Favored Soul, and Paladin caster levels equal to your Unyielding Sentinel"
Verified. It doesn't make you a lvl 11 cleric if you are considered a lvl 10 cleric for wands/scrolls. No difference to my 75% chance of using a greater restoration scroll when I applied the stance.

What about Rogue dilettante's sneak attack damage. I know it doesn't stack with the Rogue class SA damage, but what about stacking with dark monk's ninja spy SA damage, Shadowdancer's SA damage, and the epic feat?

Dilletante: Rogue and Monk Ninja-Spy Sneak Attack do stack. There are a couple of Half-Elf Dark Monks running around with 6D6 sneak damage that I know of.
At present, the only case I know of where sneak attack does not stack is explicitly Dilletante: Rogue and Rogue levels. Dilletante: Rogue should stack with ShadowDancer SA, SA from FateSinger (upto 2D6), items and anything else I've missed.

My question is what happens if you go with something like 6 CLR/7 FVS/7 PAL and get 5 Unyielding Sentinel... do you get access to all spells (and maybe extra SP?) as if you were a 11 CLR/12 FVS/12 PAL? Not sure if that would be good or not, just a theory/possibility...

No, you would just get to cast the spells you already have with +5 caster levels. Buff durations, damage dice, and tiered spell effects would be the noticeable changes from a caster level increase.
