Epic Augment question

If an item has two slots, and you want to remove the augment from just one of them, how does that work? Or does it not work and you can only clear both at once?

Unfortunately, you cannot remove a single augment on a double-augment item.

Your only option is to do the 3 Dungeon Token ritual, which destroys your current item and gives you a new copy of it, clearing any and all augments, and giving you the newest version of the item if its stats have changed.
