I read some posts about DR stacking and I just wanted to confirm if wearing Golden Greaves does mean that I have DR against slicing, piercing and bludgeoning weapons as if I had axeblock, spearblock and hammerblock?

That's what DR X/- does, yes.

Strictly speaking, the Golden Greaves (DR 3/-) are equivalent to Lesser Spearblock, Axeblock, and Hammerblock.
