I suppose it depends on what class/build you are, but assuming you can put out half decent melee DPS, wou ought to be able to do pretty much anything. Xorian Cipher might be tricky.

Melee:
Virtually everything (non-raid) can be done with a hireling depending on your gear. There are a few rough ones that can be difficult due to hireling A.I. Bastion of power can be rough for the end fight. Ghosts of Perdition can be particularly rought on a melee.

Pretty much all of Gianthold, all of Necro 4 (minus Ghosts), all of vale (Rainbow can be tough), all of the Lordsmarch quests, there's really not much limit.

Just flag your hireling back a bit and slowly back up till you get a heal but not so far as to have the hireling pull aggro then run back forward and swing away.

Just about all the quests can be done with a cleric hireling, that is how I play 99% of the time for the same reason. There are a few quests that require more than just two people, one of the quests in Necro I for instance, that you will need to group to do. There are some threads about which quests cannot be solo'd that do a good job of pointing out how many people you will need to complete them.

I've had good luck up to about level 15 with cleric hirelings, and even done some IQ stuff. You'll find you may not have enough dps for some end fights (troll lair in gh with a rogue being one example). You'll have to work on your tactics and sometimes go slow.

I can tell you that a cleric hireling won the end fight with a beholder after my toon died in caverns of korromor :)

I found Rainbow relatively easy with a hireling, and Ghosts or Perdition isn't that bad as long as you have something that can work on a doomsphere well and you can kill the brothers quickly. But more difficult at level. Fleshmaker's (IIRC) is more difficult because of the 5 runes that have to be hit fairly close together, that can be tuff with two people and two hirelings, but it can be done. I've heard about people doing it completely solo (no hireling) but I don't have that kind of 'god-like' power. Running with the Devils can be difficult because of the one red-named ghaele that self-heals. It can be difficult to do enough DPS to take it out, unless you have chaotic outsider bane (pref dual wield) or greensteel (or the right spells, or the right slaying, or a few other things).

In Gianthold the cruicible can a bit difficult with just a hireling, because of the maze.

Sometimes I wish you could bring a hireling in a raid, just to be able to try to learn the raid. Or to loot run a raid that you are overlevel anyway.

When you don't know the quest, the box that appears where you choose the
difficulty will give you a clue about how hard it is.

When it says "This adventure is of average difficulty", then you should be in pretty
good shape to work your way through it.

When it says "This adventure is challenging. Balanced party recommended.", then
if you don't know the quest, you're probably going to have more difficulty completing it.

When it says "Party based challenge! Two or more players required - hirelings may not
suffice.", well then unless you really know what you're doing you will probably get
stuck somewhere along the way.

Now, none of this says these latter two can't be done with hireling(s), but just that
if you don't know the quest, your chances of completing are reduced until you've
had a chance to run it with a party and see what needs to be done.

Also the Forums, and DDOwiki have fairly complete walkthrus so you can tell if you can finish it yourself or not.

And of course, if you don't want to be spoiled, theres always Casual.

Finally, GOLD-SEAL Hirelings.. fill the whole party!(or whatever the DDO store guys are called)
