Adamantine, silver and cold iron bolts and arrows. I've had them in my quiver for about 6 months and have yet to find a use for them. Are they for very rare monsters and if so, is it really worth holding on to them?

Silver and Cold Iron ammo are useful in Amrath/Sands/Vale/Subterrane raid due to the fact that you need Silver/Cold Iron and Good to break the DR on the raid bosses. Adamantine is limited to a few mobs (mostly golems) but still useful.

Silver arrows fired from a holy or puregood bow will break the DR of some raid bosses. Holy ammo fired from a silver/metalline bow also works, however holy ammo is more rare.
A metalline bow will fill the rest of your DR breaking needs, lose the extra ammo.
However none of that really matters for someone who doesn't use a bow as their primary DPS.

If you aren't an Arcane Archer they will be of limited use. As said different types of arrow are needed to break differnt DRs. The list in the link bellow is a fairly comprehensive list of DR breakers. Note some are "either" such as holy or silver for Orthons. Some require both such as Pit Fiends require silver and holy.

If you're an archer, you're probably using one of two bows: either a Silver Longbow (which, ironically, doesn't do silver damage) or a Lightning II greensteel. You may be using an epic Thornlord but we'll leave that out given its rarity.
If you're using either a Silver Longbow or a LitII longbow, you are already doing Good damage because both of those bows are good. By changing your arrows to silver arrows, you now break pit fiend and horned devil DR (Arraetrikos, Suulomades, Horoth, The Judge, etc.).
You can swap those arrows to Cold Iron and then penetrate Marilith DR (Demon Queen, PoP Marilith, Bastion of Power, etc.).
If you're not an archer and/or not using your bow to bypass those DR's, then the arrows are useless.
I used to carry a Holy Shortbow of GEOB and the appropriate Silver or Cold Iron arrows but melee DPS is so superior to ranged for most characters that it was just a waste of inventory space.

If you are an archer (ranger or repeater wielder), you will use them up much faster than it is worth carrying them around. Go run House D and Sorrowdusk hard enough to get 150 house favor and you can buy these arrows cheap.
As mentioned, a holy bow (or the Silver bow from the cult and the church) plus silver (pit fiends) or cold iron (demons) breaks DR. Lower level rangers might want to start the shroud this way, and melee when they get "real" boss beaters and hit points.
Finally, can AA's convert silver arrows into silver slayer arrows? I was deeply disappointed when I learned that my ranger couldn't wandwhip sturdy arrows into flaming sturdy arrows.
